Pecan Rolled Cookies

Ingredients:

  • 1 1/2 cup margarine
  • 3/4 cup brown sugar (packed)
  • 3 cups flour
  • 3 eggs (separated)
  • Salt (pinch)
  • 1 pkg pecans (finely chopped)
  • Colored frosting

Instructions:

  1. Preheat oven to 300° F.
  2. Mix together margarine, brown sugar, flour, salt and egg yolks.
  3. Make into small balls (apx. 4 1/2 dozen).
  4. Dip into egg white and roll in finely chopped pecans.
  5. Place on cookie sheet and make a fingerprint in cookie.
  6. Bake at 300° F for 5 minutes.
  7. Remove from oven and deepen fingerprint in each cookie. Return to oven and bake for 15 minutes longer.
  8. Remove cookies from pan and fill with colored frosting.

Grandkid Note

Pecan desserts around the holidays are only acceptable if they come in the form of nut horns. Uncle Mike’s been doing the Lord’s work each year, taking on the challenge of those notorious laborious pastries.
