Ingredients:
- 2 cups flour
- 2 cups sugar
- 3/4 cup cocoa
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp espresso powder
- 1 tsp salt
- 1 cup buttermilk
- 1/2 cup canola oil
- 2 eggs
- 2 tsp vanilla extract
- 1 cup boiling water
Frosting
- 3 sticks butter
- 1 cup cocoa
- 5 cups xxx sugar (powdered)
- 1/2 cup milk
- 2 tsp vanilla extract
- 1/2 tsp espresso
Instructions:
- Pre heat oven to 350° F.
- Combine dry ingredients. Add buttermilk, oil, eggs and vanilla and mix well.
- Slowly add boiling water while stirring.
- Separate batter into two 9″ round pans.
- Bake at 350° F for 30-35 minutes.
- Allow to cool 10 minutes before taking from pans. Cool completely before frosting.
Frosting Instructions:
- Cream butter with cocoa (no bumps).
- Add 1 cup of powdered sugar and 1 tbsp milk alternately until combined.
- Add vanilla extract and espresso. Mix well.

Grandkid Note
Not saying my chocolate cakes are the best ever, since I’ve never tried this recipe, but I am saying the [bomb-dot-com] recipe I’ve been using for my kids’ birthdays looks a lot like the one above.
