Polly’s Divinity

Ingredients:

  • 4 cups white sugar
  • 1 cup Karo syrup (lite)
  • 3/4 cup water
  • vanilla extract
  • 3 egg whites
  • Nuts

Instructions:

  1. On medium boil, stir together sugar, Karo syrup and water only until sugar dissolves.
  2. Then heat to hard ball stage – DO NOT STIR.
  3. Beat three egg whites until frothy – only – add syrup until [word I can’t read] loses gloss.
  4. Add capful of vanilla extract and nuts after starts to set. (Tint same time)
  5. Ball out of cold water cracks in sink.
  6. Makes 32-42 pieces.

Grandkid Note

I remember my mom loving divinity. I can recall her excitement when I was a child at the thought of Grandma making divinity – or even at finding it on a roadside stand when traveling north.
