Chicken Cordon Bleu

Ingredients:

  • 6 chicken breasts (boneless, skinless)
    • *you’ll also need meat twine.
  • 6 oz swiss cheese
  • 6 slices deli ham
  • 3 oz can mushrooms
  • 1/3 cup sauterne wine (*grandkid note: can use white wine)
  • Slivered almonds (toasted)
  • Chicken broth (optional)
Gravy
  • 1/2 cup water (cold)
  • 2 tbsp flour

Instructions:

  1. Preheat oven to 350° F.
  2. Pound chicken to 1/4″ and salt. Add ham and cheese, tie, coat with flour.
  3. Brown chicken bundles in buttered skillet. (*grandkid note: I think the next step is to set aside in baking dish)
  4. Combine gravy, mushrooms, and wine in same skillet. Heat and stir crust loose. Pour over chicken.
  5. Bake at 350° F for 30-45 minutes.

Family Note

When Grandma’s oldest daughter, Lisa, introduced the chef she was dating to the family, he introduced the family to chicken cordon bleu. The two had met while working at Tony’s Town Square Restaurant in Walt Disney World, and his culinary creations continued to please everyone’s palettes for another 30 years.
