Chick Stambocca

Ingredients:

  • Chicken breasts
  • Mozzarella cheese (sliced)
  • Ham (thinly sliced)
  • Tomatoes (chopped)
  • Breadcrumbs
  • Thyme
  • Oregano
  • Salt & Pepper
  • Parmesan cheese (grated)
  • Egg
  • Skim milk

Instructions:

  1. Preheat oven to 375° F.
  2. Cut chicken breast in half and pound flat. Add cheese, ham and tomato. Roll and put toothpicks (tuck in sides as roll).
  3. Dip in egg and skim milk
  4. Roll in breadcrumbs, thyme, oregano, salt, pepper and parmesan cheese.
  5. Spray pan. Bake at 375° F for 20-25 minutes.

Family Note

Grandma’s parents came to the United States “off the boat” from Ireland and Italy. The family name, Diotti, was given at Ellis Island when it was changed to a more American version of its Italian original, Diorio.
