My Bread

Ingredients:

  • 5 lbs bread flour
  • 1/2 cup sugar
  • 1 tbsp salt (heaping)
  • 1/3 cup oil
  • 4-5 cups hot water (110°-120°)
Active Yeast
  • 1 strip (of 3) active yeast
  • 1/4 cup water
  • 1 tsp sugar
(OR) Rapid-Rise Yeast
  • 1 strip (of 3) rapid-rise yeast

Instructions:

  1. Pre heat oven to 350° F.
  2. Mix dry ingredients and set aside.
  3. If using active yeast: Mix active yeast ingredients and let set to proof for 10 minutes.
    • If using rapid-rise yeast: Add yeast to dry ingredients.
  4. Add oil and hot water (110°-120°). Set aside in warm area and let bread rise until doubled-in-size.
  5. Separate dough into five loaves.
  6. Bake at 350° F for 20 minutes.
FOR ROLLS:
  1. Preheat oven to 400° F.
  2. Follow steps 2-4 (above)
  3. Separate dough into 60 rolls
  4. Bake at 400° F for 12-15 minutes.

Grandma’s Legacy

The last phone call I received from Grandma was about one thing – bread. Christmas was days away and she was still in the hospital. She called to instruct me to let Jay know that he’d need to make the bread for her that year – and she was extra clear that she didn’t want him to put any of those fancy herbs in it.

Now Jay makes bread two ways: a batch the way she asked and another with his own touch.
